We will be starting our trip today! In the meantime I had a request for my pizza dough recipe!
So below is the recipe, in grams, it is easier to measure that way! I use a small digital postal scale!
The regular hand tossed pizza dough recipe: makes 3 (19 oz.) 16" Pizza's
982 grams of bread or high gluten flour
590 grams of very warm water
4 grams instant dry yeast (add to flour)
20 grams salt
10 grams of sugar
9 grams of olive oil
Mix yeast and flour together. Dissolve the salt and sugar in the water, mix about 3/4 of the flour and yeast mixture together, beating it vigorously with a fork for a few minutes, add the rest of the flour and yeast, combine by hand till forms a dough, blend in the oil by kneading the dough while still in the bowl, once the oil is blended in,dump onto table or counter and continue to knead till it becomes smooth and elastic, you may need a little flour, about 10 minutes or so. Roll into a ball, put in an oiled container cover, coat both sides lightly, let sit about 5 minutes - then refrigerate overnight, it should double in size, use the next day!
You can let it almost double in size, refrigerate, then use it that day, I like to let mine slow rise and use the next day!
